If you’ve watched our Extraordinary Angles^®, Inspired by…Kitchens video, you probably have seen the scrumptious pan seared scallops dish prepared with our host, Mark Thomas. Cory Martin Events, the acclaimed catering and event company based in Beverly Hills, was gracious enough to have one of their premier chefs cook up this delectable treat on camera for us.

We asked founder, Cory Martin, to share his original recipe featured in the video and thoughts on his dish selection.

“When deciding on a dish I always look at what is in season, how I can challenge my creative pallet and make it look like art. My mother made me a believer that people eat with their eyes so presentation is equally as important as taste.

On the day of the video shoot, we knew the blood oranges were in season so from there I wanted to create a dish that would correctly compliment its flavors all while being healthy for the mind and body. Earlier in the day we went to the local farmers market to pick up the fresh shallots, thyme, asparagus, potatoes and blood oranges. From there we drove to the local fish market at the Santa Monica Pier to pick up the scallops. With all of these wonderful and fresh ingredients from our local vendors it would almost be impossible to make a bad dish. Bon Appetit!”

Pan Seared Scallops on Fondant Potato with Blood Orange Butter Sauce

4-5 Large scallops

4 Potatoes

1 lb. Unsalted butter

1 pt. Extra Virgin Olive Oil

1 pt. Chicken Stock

1 cup Blood Orange Juice or Purée

1 Bunch Thyme

1 package Microgreens

1 Bunch Asparagus

3 shallots
